Why on earth bother to make soup I hear you bellow, when you’re beyond frazzled and have precisely 10 zillion things to do by yesterday?

Well, because this super soup gives you an instant feel-less-frazzled boost.

(And that’s not just me saying that, there’s some science behind it).

AND as it takes 3 minutes to make, with no chopping or faffing, it’s perfect for a pit-stop, mum lunch when you’d otherwise not stop and survive on biscuits, (cookies to you Americans), all afternoon until you’ve yelled at everyone in the house from the kids to the vaccum cleaner and collapsed in a quivering heap!

And it’s even no-brain easy enough to whip up when you get in from work!

It really is quick, I promise, and it certainly defrazzles me.

So here goes …

Green Soup Ingredients

Grab …

  • half a bag of baby spinach
  • a handful or so of frozen peas
  • some ground almonds or any other ground nuts
  • a teaspoon of stock powder

The spinach, almonds and peas are all rich in folate which is really good for mental health, plus loads of other goodies which help our brains cope with the stress and anxiety of juggling too much.

Step by Step

1. Blast peas in microwave for a minute on high in small amount of water – not enough to cover them – they don’t even need to be fully defrosted …

2. Rinse spinach quickly

3. Shove spinach in blender with half a cup-ish of water plus teaspoon of stock or put in pan and blend with hand stick blender. In stand up blender, blend the first half of leaves then add the rest and blend again.

(I totally love, love, love my NutriBullet (UK) which I got for Christmas but you don’t need a fancy blender to make this. Pre-Christmas I made it with my brilliant little Braun stick blender which cost less than twenty quid!)

4. Chuck in peas (with their water)

5. Shake in a generous helping of ground almonds and blend again

6. Tip in pan (if not blending in pan) and heat up for a minute or so

7. Gobble down with a big chunk of spelt bread!

(If you’ve not discovered spelt, you so need to.

It’s low GI, so great for the whole family’s blood sugar and although not gluten free much gentler on everyone’s tum than wheat.)

So there you go … unbelievably easy and it really does make me feel better able to cope with everything motherhood is chucking at me.
