MORE SWEET PANCAKE TOPPINGS AND FILLING IDEAS
1. SUGAR AND LEMON
It’s the OG classic pancake topping. Squeeze fresh lemon generously over warm pancakes and sprinkle with white or golden sugar.
2. MAPLE SYRUP AND SLICED BANANA
The thing I love about maple syrup, aside from its divine taste, is that it is actually low GI. So, it’s a delish but healthy option. I am partial to popping sliced bananas on a pancake and then drenching them with maple syrup.
3. MIXED BERRIES, MAPLE SYRUP AND CREME FRAICHE
Either fresh or defrosted frozen mixed berries, drizzled with maple syrup and topped with a dollop of creme fraiche, work wonderfully on a pancake, both for Pancake Day and also as a healthy breakfast treat.
4. SPRINKLES AND SQUIRTY CREAM
A big old covering of squirty cream and a smattering of multicoloured sugar sprinkles make a really fun pancake topping for little kids.
5. SALTED CARAMEL SAUCE
Salted caramel is proven to be the perfect combination of salty and sweet, so is it any wonder that it always goes down as a treat drizzled over freshly flipped pancakes? Add a few slices of bananas if you want to polish your virtue halo!
6. CHOCOLATE HAZELNUT SPREAD
Be it Nutella or my favourite alternative, Biona Chocolate Hazelnut Spread, you can’t beat a big old dollop of it smeared over a warm pancake.
7. ICE-CREAM AND MINI MARSHMALLOWS
Mini marshmallows sprinkled over gently melting ice cream (classic vanilla or chocolate ice cream works particularly well) will have kids of all ages grinning with glee.
8. S’MORES
How about taking all the ingredients for S’Mores and turning them into a pancake topping? This works well if you pop the ingredients in little dishes and then let kids dive in to splatter, smear and sprinkle their own topping. You’ll need crushed cookies/biscuits, mini marshmallows and a bowl of chocolate spread.
9. PB&J
We discovered one morning that peanut butter and jelly is actually rather good on pancakes when we’d made pancakes for breakfast and then realised that we’d run out of chocolate spread. Give it a try; it really works!
10. BLUEBERRIES AND RICOTTA
Ricotta is a popular ingredient in cheesecakes and works super well, smeared on warm pancakes and then topped off with blueberries. Need a little extra sweetness? Drizzle some agave syrup over the lot.
